May is right around the corner, and so too are the latest menu offerings from Copper Shores Meals on Wheels. Using funding from the Local Food Purchase Agreement Program, Meals on Wheels is supporting local and regional farmers while bringing fresh, nutritious ingredients to seniors. Kitchen Manager Tribin Holbrook works with producers big and small to provide seniors with hearty, fresh and flavorful ingredients.
One of the delights of buying from small, independent farms is getting to meet the folks that run them. Their efforts are especially impactful as the harvest season ramps up and fresh produce becomes more abundant.
As the growing season comes into full swing, seniors can expect more locally sourced regional produce in their meals. Some of the meals featuring local ingredients include:
- May 1: Southwest chicken salad, jello and a whole wheat roll, with lettuce from Revolution Farms and Minnie Farms.
- May 9: Pepperoni pizza, salad and fruit, with fruit from Riveridge Produce.
- May 16: Sloppy joes, baked beans, vegetables and fruit, with ground beef from Buried Stone Farms.
- May 27: Honey glazed chicken, rice, vegetables and a fruit cup, with rice from Dynamite Hill Farm.
