The kitchen team at Copper Shores Meals on Wheels has been hard at work preparing for April and the onset of spring. Thanks to careful planning and collaboration with several community partners, Meals on Wheels has been able to provide locally sourced ingredients to seniors throughout winter. As the weather begins to warm, the team is gearing up for the growing season with new produce and protein to be purchased.

Many of the ingredients used throughout the winter were purchased during the 2024 growing season, using funding from the USDA’s Local Food Purchase Assistance Cooperative Agreement Program. Ingredients are processed as soon as they enter the Meals on Wheels kitchen, getting cleaned, portioned and frozen at peak freshness - a step that locks in nutritional value.

Several meals in April feature ingredients that were purchased from local and regional farmers. This month, seniors are treated to both warm and cozy meals to get through the remainder of winter, as well as light and fresh meals to welcome in spring.

Some of the meals with local and regional ingredients include:

  • April 3: Chicken caesar salad, garlic bread and a fruit and yogurt parfait, with chicken from Buried Stone Farms.
  • April 9: Roast beef dinner red potatoes, vegetables and birthday cake, with potatoes from Johnson Potato Farm.
  • April 25: Chicken and broccoli pizza, salad and fruit, with broccoli from Boersma Family Roots.
  • April 30: Chili, corn bread and fruit, with ground beef from Frozen Farms Co.
